Chef Josh Capon presents two US Open recipes to recreate at home

The US Open marks the final Grand Slam of the 2024 tennis season, but before defending champions Coco Gauff and Novak Djokovic arrive on the legendary grounds of the USTA Billie Jean King National Tennis Center alongside hungry top competitors and even hungrier fans, one of the event’s key culinary contributors, Chef Josh Capon, is giving guests a first taste of some delicious new dishes.

As Capon prepares to resume his role as guest server at the tournament in New York City later this month, he joined “Good Morning America” ​​on Tuesday and introduced two new bites to the menu this season: BLT sandwiches with chicken salad and chilled rolls with crab salad.

Capon, owner of Little Maven and his catering company VCR Group, will also include these dishes on the menu at the US Open’s culinary highlight, Flavors of the Open, on August 22.

Chicken Salad BLT

Ingredients

Chicken salad mix:
1 roast chicken, chopped
1 small red onion, diced
3 sticks of celery, diced
1/2 cup fresh dill, chopped
1/2-1 cup mayonnaise, depending on preference
1 tablespoon Dijon mustard
1 lemon juiced
Salt and pepper

Other ingredients:
2 slices maple bacon
1 tomato slice, for garnish
1 piece of lettuce, for garnishing
Ciabatta bread
Butter for toasting the ciabatta

Instructions

Peel all the chicken meat and dice it.

Prepare the chicken salad mix by mixing all ingredients in a large bowl.

Toast the ciabatta bread on the grill plate with a little butter until golden brown.

Build the sandwich on the ciabatta (chicken salad, bacon, tomato, lettuce).

Tips from Chef Capon:

The roast chicken saves time for the chicken salad. Remove all the skin and then separate the meat from the bones.

The chicken salad also tastes great in lettuce leaves with warm diced bacon as a starter or when you want to avoid carbohydrates.

Make sure your ciabatta rolls are nicely toasted with olive oil or butter and that your bacon is warm and crispy.

Always season your sliced ​​tomatoes with kosher salt and freshly ground pepper.

Chilled shrimp salad rolls

Ingredients
2 pounds shrimp (21/25 pieces), peeled, deveined and with tail removed
2 cups diced celery
1/2 cup red onions (optional)
1/2 cup chopped fresh dill
1 teaspoon Dijon mustard
1 lemon, peel and juice
1 teaspoon hot sauce
1 cup mayonnaise or as desired
Kosher salt and freshly ground pepper

Instructions

Cook the prawns in salted water until al dente and then plunge into ice water for 2 to 3 minutes. Pat the prawns completely dry before adding the other ingredients.

Mix all ingredients together and then fold in the shrimp.

Toast the buns with butter until golden brown on all sides.

Fill the rolls with the shrimp salad.

Garnish with fresh dill and lemon slices.

Serve immediately with salt and vinegar chips and enjoy.

Culinary greatness returns to the US Open

In addition to Chef Capon’s new dishes, the event will also feature Michelin-starred restaurateur Simon Kim’s famous chicken from his trendy eatery COQODAQ.

Fans can enjoy specialties from the Korean-inspired Better Fried Chicken restaurant, including The Golden Nugget, a combination of chicken nuggets and caviar, on the club level of Arthur Ashe Stadium.

Other returning celebrity chefs from the Big Apple include Alex Guarnaschelli, Kwame Onwuachi, Ed Brown, David Burke, Pat LaFrieda and Masaharu Morimoto.

Fans can preview all the premium canapés and meet the chefs at the “Flavors of the Open” presented by Dobel Tequila later this month during Fan Week at Louis Armstrong Stadium.

Maestro Dobel is the first official tequila of the US Open and the brand will offer Paloma as its signature drink this year.

The United States Tennis Association and its dining partner Levy Restaurants recently announced a comprehensive preview of the extensive dining options that will be offered on-site at the 2024 US Open.

In addition to the diverse selection of unparalleled food, refreshing beverages such as the Grey Goose Honey Deuce and the Maestro Dobel Ace Paloma – which made its debut last year as the tournament’s first official tequila – will be available again this year for fans to enjoy responsibly.

Also new this year: Maestro Dobel Tequila will introduce his Dobel Tequila Club – an upscale food and beverage area where guests can sip tequila and watch all the tennis action live.
